Foodie Friday – the “I’m a genius” edition

Ok, so maybe I’m not a real genius, but after coming up with the tastiest lunchtime concoction ever the other day, I kinda felt like one. Even if just for a split second. I even instagrammed and tweeted out my geniusness to that effect. πŸ˜‰

This baby is my version of a grilled cheese — it’s genius, I swear. I took a flatout wrap (best invention ever), smeared it with an herb/garlic laughing cow wedge, added a slice of lite provolone cheese (Trader Joe’s makes a really good one), some sliced tomato and fresh mixed greens — and then I folded it over and into the pan it went. I pressed it down (panini-like) until it was toasty on both sides. On the side was an orange and some fresh strawberries – this girl needed the vitamin C boost in a big way this week (notsicknotsicknotsick and all).

Another “genius” item for this week — this one goes to my sis who came up with a yummy alternative to my usual go-to PM snack (usually Chobani…unless I’m running shortly thereafter. Running + dairy + meΒ = no bueno as we all learned last week!).

Into the bowl went cottage cheese and a perfectly ripe banana sliced nice and thin. You might spy some crumbles on top too — that’s from a failed attempt at Nicole’s no-bake chocolate chip “cookies.” (don’t worry Nicole, I’ll try again – for now, they are great as a topper to cottage cheese or yogurt!).Β  This was so yummy — definitely rotationg this sucker into my PM snack mix asap!

And finally – a new take on plain ‘ol water. Something I drink a ton of already, but drank even more of this week while warding off the sickies. I’m a big fan of selzer water (after I drink my allotted “regular” water for the day, at least 64 oz) – and like to spruce it up with fresh fruit whenever possible.

Well – I recently got a box of Vita Coco water to try out and figured I’d throw that into my selzer one day (I’m a fan of the pineapple infused vita coco but find the mango/peach flavor hard to drink on it’s own for some reason).

The result? A really refreshing and tasty, kicked-up selzer water. This one had fresh blackberries and pineapple, a splash of the Vita Coco mango/peach water and lots of ice. Super-duper refreshing…and for a split second, if I closed my eyes really tight, it felt like I was sitting on a beach somewhere drinking a tropical-infused drink. πŸ˜‰

So there you have it – a couple of new (and genius!) foodie finds for me this week. All very tasty, all very nutritious and healthy, and all very easy and fun to make (and eat!). God, I love food. πŸ˜‰

  1. Oh my, you ARE a genius! I love fancy grilled cheeses. I better have one today now, or I’ll never stop thinking about it after seeing yours!

  2. I’m a HUGE cottage cheese fan, but I don’t like it sweet (i.e. with fruit). I keep trying b/c it seems to be everyone’s favorite way but I like it plain, just the way it is! πŸ™‚
    Happy Friday, genius!

    • I used to only eat cottage cheese when it was “masked” with lots of other flavors. Now I like it plain just as much as with fresh fruit on top. Sometimes I make it savory with salt and pepper and chives in it. Maybe you would like it that way too??

  3. This sounds really weird but I used to mix cottage cheese, peanut butter, banana and some sweetener together and eat it for breakfast like every day. I’m not sure why it fell out of the rotation; it was good!

  4. LOVE the idea of using seltzer with Coconut Water. I love coconut water but its a little too strong for me…definitely will be trying this!

  5. Definitely have to try that sandwich!

The rest I can do without tho πŸ˜‰ I cannot eat cottage cheese – it doesn’t feel good on my tongue. And the one time I tried coconut water, I spit it out HAHA!

    • I think cottage cheese is an acquired taste – at least it was for me. A lot of people can’t get past the texture — the hubs is one of them. He thinks its nasty! hehe

  6. Great choices sis, GENIUS I tell you. I LOVE pressing my wraps so they are like paninis but not bad for you at all! And LOVE that cottage cheese combo…who knew, right?! It is wicked good! Thanks for the kudos – lol

    • Well duh, I always give credit where credit is due! I almost included the lentil yumminess you made me the other night but figured I didn’t wanna rain on your parade – and lo and behold, it’s in your blog post today too. Genius! πŸ˜‰

  7. You know, I have a George Foreman grill I haven’t used in YEARS. And now I shall be using it to press sandwhiches. Thanks, as always, for the inspiration!

  8. Mmm, your pressed wrap looks delicious! As does the seltzer water… as it warms up, I need more creative drink ideas. Thanks for sharing!

  9. Totally stealing your grilled cheese idea. πŸ™‚

And the Vita Coco? I drink it all the time…and I can’t drink any flavors on its own except the Pineapple. I can gulp that down super easy. The mango is gross. LOL
